Healthy Oats Cake

Ingredients:

  • 1 cup of rolled oats
  • 1 cup of whole wheat flower
  • 1 teaspoon of Baking Powder
  • ¼ teaspoon of Baking Soda
  • A pinch of Salt
  • ¾ cup of Brown Sugar
  • 2 eggs
  • ½ Cup of Butter/ Oil
  • 1 teaspoon of Vanilla essence
  • 1 medium bowl of Nuts (any kind- optional)

Possible Substitutes

  • Sugar can be replaced by dates. This is a good alternative for diabetics or as a healthier option.
    • 25-30 pieces of dates
    • Remove the pits of the dates.
    • Place the dates in a pot with 2 glasses of water and boil it for 5 mins at medium flame.
    • The dates will turn soft and squishy. Let it cool. This mixture must be added in place of sugar in step 5.
  • Instead of eggs you can add 250 ml of plain yogurt (Vegetarians option)

Directions:

  1. Preheat oven at 350F
  2. Place the oats in a frying pan and heat it up for 1-2 mins on low flame.
  3. Grind the Oats.
  4. Combine the oats, whole wheat flower, baking powder, baking soda and salt in a large bowl. Mix thoroughly.
  5. Take a second large bowl and add 1 egg and a little bit of sugar and beat it until smooth. Add the second egg and the rest of the sugar and beat it until it turns fluffy. Mix in oil/butter. Mix in nuts (optional).
  6. Combine both mixtures (from 3 and 4).
  7. Grab a cake tray and grease it using butter. Pour in the mixture. Level out the mixture.
  8. Bake it at 350F for half an hour.

Extra Info:

You can add as many nuts as you want and of any kind! The cake is not too sweet and is perfect for tea or coffee! If you prefer a sweeter cake add more brown sugar/ dates to your liking!
