Healthy Oats Cake
Ingredients:
- 1 cup of rolled oats
- 1 cup of whole wheat flower
- 1 teaspoon of Baking Powder
- ¼ teaspoon of Baking Soda
- A pinch of Salt
- ¾ cup of Brown Sugar
- 2 eggs
- ½ Cup of Butter/ Oil
- 1 teaspoon of Vanilla essence
- 1 medium bowl of Nuts (any kind- optional)
Possible Substitutes
- Sugar can be replaced by dates. This is a good alternative for diabetics or as a healthier option.
- 25-30 pieces of dates
- Remove the pits of the dates.
- Place the dates in a pot with 2 glasses of water and boil it for 5 mins at medium flame.
- The dates will turn soft and squishy. Let it cool. This mixture must be added in place of sugar in step 5.
- Instead of eggs you can add 250 ml of plain yogurt (Vegetarians option)
Directions:
- Preheat oven at 350F
- Place the oats in a frying pan and heat it up for 1-2 mins on low flame.
- Grind the Oats.
- Combine the oats, whole wheat flower, baking powder, baking soda and salt in a large bowl. Mix thoroughly.
- Take a second large bowl and add 1 egg and a little bit of sugar and beat it until smooth. Add the second egg and the rest of the sugar and beat it until it turns fluffy. Mix in oil/butter. Mix in nuts (optional).
- Combine both mixtures (from 3 and 4).
- Grab a cake tray and grease it using butter. Pour in the mixture. Level out the mixture.
- Bake it at 350F for half an hour.

You can add as many nuts as you want and of any kind! The cake is not too sweet and is perfect for tea or coffee! If you prefer a sweeter cake add more brown sugar/ dates to your liking!
