Kerala Pork Fry Recipe by: Baby Devassy
Marinating Pork
Pork with fat 2 lbs
(cut into small pieces, wash well, drain water, rub salt and keep aside – Picture 1)
- Coconut oil 1 tbsp
- Ginger garlic paste 1 tbsp
- Curry leaves 1 string
- Turmeric powder 1 tsp
- Chilly powder 1 tsp
- Pepper powder 1 tsp
- Garam masala powder 1 tsp
- Green chilly 2-3
- Onion chopped 1 medium
- Vinegar or Lemon juice 1 tbsp
Rub ingredients 1-10 very well on pork and keep aside for 15 minutes. (See picture 2)
Cooking Instructions
- Onion chopped 3 medium sized
- Ginger garlic paste 1 tbsp
- Curry leaves 1 string
- Coriander powder 2 tbsp
- Turmeric powder 1 tsp
- Crushed chilly flakes 1tbsp
- Pepper powder 1 tsp
- Garam masala powder 1 tsp
- Salt if needed
Cook pork in a bottom strong pan on medium heat. Cover using a lid. When water is dried up and fat starts to clear like oil, in the bottom of pan, move pork to the sides of pan, thereby bringing all the fat to the middle. (picture 3)
Add chopped onions and stir every one minute. (picture 4)
Add salt if needed.
When onion starts to brown, add all remaining ingredients from 2-8 and stir fry until pork turns to dark in color. (picture 5)
